San Jacinto is located in San Padro Necta, Guatemala. Collectively cultivating 42 hectares of land, 11 individual smallholder farmers work together under the name La Encenada. Coffee is carefully handpicked by members of the family throughout the harvest to ensure quality. This daily handpicking is essential for high quality coffee since cherries ripen at different times, even on the same branch of the coffee shrub. After harvest, the coffee cherries are again hand-sorted by family members before being wet-processed and patio dried. All of this work leads to a coffee that displays the hallmark characteristics of an exceptional coffee from Huehuetenango: smooth caramel sweetness and delicate topical fruit acidity.
