Finca La Guacobia is located in San Adolfo, Huila, Colombia and run by Andres Guaca. The farm sits at an elevation of approximately 1,550 meters and consists of approximately 5 hectares in coffee. Of those 5 hectares, approximately 7,500 trees are Pink Bourbon, 5,000 are Tabi, 5,000 are Castillo, 5,000 are Caturra and approximately 3,000 are Geisha. This lot is comprised of 100% Pink Bourbon. The coffee is fermented for approximately 24 hours in cherry in the tank, dry de-pulped and then dry fermented for an additional 40 hours in bags. Upon washing, the coffee is dried in a parabolic dryer for approximately 20 days. Not all Pink Bourbons produce the same cup quality, but this lot is an exceptional example of what the variety can show when processed with care. Andres also runs a small association of growers called Grupo Asociativo Los Gigantes, which has a small purchasing point in town and uses it to help the growers find markets for their coffees. We met Andres last year through our work in Pitalito (not far from San Adolfo) and look forward to working with him, and other growers in the group, in future harvests.
